Sans's attacks are more straightforward but require a good amount of precision to dodge. Memorizing the attacks is key go beating sans. Jevil's attacks are more chaotic and random, making skill a higher priority than memory. Sans took me about 70 tries to beat, and hundreds of tries to no hit.
