Thing about grounded is that mutations are what gear the game towards you. So choose the mutations that fit you and gear up to support those mutations.

The chances of it applying may stack but stacking more venom damage, no. It's a chance to apply and does not stack damage wise. But it's a separate instance of coating than poison coating so it does more over all. Add the mom genes mutation and use a widow dagger with assassin and you're proccing a lot of dot damage fast.
